Bugs Bunny Snack Cake

Ingredients

  • Cake:
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 cup butter or margarine
  • 3/4 cup sugar
  • 2 eggs
  • 6 carrots, shredded
  • 1 can (8 ounce) crushed pineapple in juice, drained
  • 1/2 cup dark raisins
  • Frosting:
  • 1 package (8 ounces) cream cheese, softened
  • 2 cups confectioners' sugar
  • Decorations:
  • Carrot curls
  • Pineapple chunks
  • Raisins

Preparation

Step 1

Preheat oven to 350 F. Grease and flour 9-inch square baking pan. In bowl combine first 3 ingredients. In bowl with mixer at high, cream butter, sugar and eggs until fluffy. Stir in flour mixture until combined. Stir in carrots, pineapple and raisins. Pour into prepared pan. Bake 45 to 50 minutes until pick comes out clean. Cool in pan 15 minutes. Remove from pan; cool on wire rack 1 hour.

For frosting, in bowl with mixer at high, beat cream cheese and confectioners' sugar until smooth. Spread over cake. Decorate with carrot curls for hair, pineapple chunks for eyes (raisins for the pupils), raisins for the eyebrows and a double line of raisins for the mouth.
