Fresh Peach Cake

Ingredients

  • Sauce (optional):
  • 1.5 cup sugar
  • 2 eggs
  • 3/4 cup oil
  • 1 1/3 cup mashed peaches
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • dash of salt
  • 1 cup sugar
  • 2 tsp. flour
  • 1/2 cup butter
  • 2 egg yolks
  • 2/3 cup evaporated milk
  • 1 tsp. vanilla

Preparation

Step 1

1. Mix oil, eggs and sugar. Add mashed peaches.
2. Stir in the flour, soda, cinnamon nad salt.
3. Put in a 9" greased pan or bundt pan or use loaf pans.
4. Bake at 350 degrees for 30 minutes or until done.

Sauce:
1. In small sauce pan, combine ingredients well. Boil until thickened. Watch carefully as it will burn.

Serve cake with sauce (optional) and fresh peaches.
