  • 4 wide mouth 1 1/2 pint jars
  • 3 egg whites
  • 2 c. sugar
  • 1 c. margarine (room temp)
  • 2 c. grated zucchini
  • 1 tsp. vanilla
  • 3 c. unbleached flour
  • 1 tsp. salt
  • 1 tsp. bak. soda
  • 1 tsp. bak. powder
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves

Step 1

Generously prepare inside of jars w/ margarine. Combine batter: flour, salt, bak. powder, bak. soda, cinnamon, nutmeg, cloves. Combine: egg whites, sugar, margarine, zucchini. Divide batter evenly into jars (slightly less than 1/2 full). Wipe rims, place on baking sheet in oven for 40 mins. at 325. Keep lids hot till ready. Screw on hot jars. Decorate after sealed by unscrewing band and rescrewing with cloth.
