Shoe Peg Salad

Ingredients

  • 1 can shoe peg corn
  • 1 can very small green peas
  • 1 C chopped onion
  • 1 C chopped celery
  • 2 bunches green onion, chopped
  • 1/4 C vinegar
  • 1 C sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 1 small jar pimento
  • 1/2 C cooking oil

Preparation

Step 1

Combine vinegar, oil, salt and sugar. Bring to a boil, then allow to cool. Drain corn, peas and pimento; mix with remaining ingredients then add to previously boiled liquid mixture. Mix well. Refrigerate overnight before serving.
