Broccoli Casserole

Ingredients

  • 10 oz package frozen broccoli
  • 1 small onion, chopped
  • 1/2 stick butter
  • 1/2 cup Colby/Jack cheese, shredded
  • 2 1/2 cup Ritz crackers, crushed, divided
  • 1 can cream of mushroom soup
  • 1/2 cup mayo
  • Salt/pepper

Preparation

Step 1

Preheat oven to 350 degrees.

Steam broccoli until limp. Remove from heat and drain. Saute onion and butter until onion is tender. Add the onion to the broccoli.

Add the cheese, 1/2 cup Ritz crackers, cream of mushroom soup, mayo and salt and pepper to the broccoli mixture. Mix well. Pour mixture into a casserole dish sprayed with cooking spray. Top with the remaining 2 cups of crushed Ritz crackers.

Bake for 20-25 minutes.
