spinach balls


great make ahead appetizer to keep in the freezer.

  • 1 1/2 sticks butter
  • 6 large eggs
  • 1 box chicken flavor stuffing (stove top)
  • 2 10 oz frozen chopped spinach defrosted
  • 1 cup grated parmesan cheese
  • 1/4 tsp black pepper



Step 1

melt butter in microwave @ 1 min.

squeeze out as much of the moisture as you can from the spinach, set aside.

in a large mixing bowl whisk eggs til foamy. Add remaining ingredients. Stir until the spinach is thoroughly combined. Roll into balls of desired size. Place balls on a cookie sheet and freeze. Store frozen balls in a zip lock bag in freezer. When ready to bake preheat over to 350.

Place frozen balls on a cookie sheet and bake 10 - 15 minutes (depending on size of balls) until bottoms are lightly browned. ( the balls can also be baked before freezing. Baking time is them 6-10 min for unfrozen balls)

cool slightly before serving.
