Crostini With Caramelized Onion Jam

Ingredients

  • 1 can Pillsbury refrigerated crusty French loaf
  • 2 tablespoons olive oil
  • 2 medium sweet onions thinly sliced
  • 2 teaspoons garlic chopped
  • 1 teaspoon kosher salt
  • 2 tablespoons packed brown sugar
  • 1/4 cup red wine vinegar
  • 1/2 cup chicken broth
  • 1/4 cup cream cheese softened
  • 1 teaspoon chopped fresh thyme or oregano leaves

Preparation

Step 1

Heat oven to 350 Bake French bread as directed cool 5 minutes.
Meanwhile in a 2 quart saucepan heat oil over medium heat. Stir in onions and garlic cook uncovered 10 minutes, stirring every 3 to 4 minutes. Add salt, brown sugar, vinegar and broth. Heat to boil and reduce heat. Cover and simmer for 30 minutes.
Meanwhile cut off ends of cooled loaf, cut into 24 slices about 1/2 inch thick. Arrange slices on ungreased cookie sheet. Spray each slice with cooking spray until lightly coated. Return to oven and bake 8 to 10 minutes or lightly toasted.
Remove saucepan cover, increase heat to medium high. Cook 2 to 5 minutes stirring frequently, until most of the liquid is reduced and the mixture is the consistency of jam. Remove from heat and set aside.
Place 1 teaspoon of onions on each toasted bread slice, top with 1 round teaspoon of cream cheese sprinkle with herbs.
