Chili Corn Spoonbread

Ingredients

  • 1 cup yellow corn meal
  • ½ cup oil
  • ¾ cup milk
  • 2 eggs
  • ½ tsp salt
  • ½ tsp. soda
  • 1 16 oz can cream style corn
  • 1 4oz can diced green chilis
  • 2 cups grated cheddar or longhorn cheese

Preparation

Step 1

Mix milk, oil and eggs together. Add all other ingredients except ½ cup of cheese and mix thoroughly. Put in casserole dish and sprinkle remining cheese on top. Bake for 45 minutes in a preheated 350 degree oven or until totally set in the center and ligthly browned on top.
