Never Fail Chicken Dumplings

This is a traditional southern recipe for chicken and dumplings that is super popular in the south.

Ingredients

  • 1 fryer (small chicken)
  • salt and pepper to taste
  • 1 stick margarine
  • 2 c. broth
  • 1 egg
  • yellow food color

Preparation

Step 1

Boil fryer until tender. Add salt and pepper to taste. Remove chicken from broth and add 1 stick of margarine. Add enough water to make pot 3/4 full. Mix by hand:

2 c. broth
1 egg
4 drops of food color

Mix and roll out all dumplings very thing. Drop in broth that is boiling hard. When all dumplings are dropped in, turn heat to low and simmer 5 minutes Remove bones from chicken and add to dumplings. Turn heat off and let stand in pot with lid on for 20 to 30 minutes. Hen can be used, but omit margarine. Also small new Irish potatoes may be substituted for chicken.
