Pineapple Cheese Pie

Ingredients

  • Crust:
  • 1/2 stick butter
  • 3 tbs. sugar
  • 1 egg
  • 1/2 teas. baking powder
  • 1 c flour
  • Filling:
  • 8 oz. cream cheese
  • 2 eggs
  • 4 tbs sugar
  • 2 tbs flour
  • 2 c milk
  • 1/2 t vanilla
  • juice of 1 lemon
  • Topping:
  • 1 pk. vanilla pudding
  • 1 can crushed pineapple
  • 11/2 c juice from pineapple

Preparation

Step 1

Crust:


Cream butter and sugar first. Add rest of ingredients in order. Mix. Press into 8' or 9" pan.

Filling:

Cream cheese. Add eggs and other ingredients in order. Pour into crust and bake at 350 for 1 hour.


Topping:

Cook pudding with juice. When thick add pineapple. Cool. Put on pie. Chill.
