    cup butter, softened

    cup sifted icing sugar

    tsp. vanilla

  • 2

    cups flour

  • ½

    cup cocoa powder (unsweetened)


preheat oven to 300F using a paddle attachement and mixer is okay, if you can blend ingredients by hand. do not over mix batter. cream butter. mix in vanilla and icing sugar until incorporated. in bowl sift together flour and cocoa powder. gradually add to butter mixture. this is wear over mixing can happen, ingredients needs to be mixed together to form a ball, it should not be gooey or add more flour and cocoa if needed. form a ball, and on a floured surface, roll dough to 1/4 inch thick. cut into small rounds or fancy shapes. place on baking sheet. prick cookies with a fork. bake 25 minutes or until firm. (can bake 15 minutes then turn off oven when cookies are firm remove from oven) remove cookies from baking sheet and cool on racks until set. store in airtight container.
