Chicken Satay with Peanut Sauce

Ingredients

  • PEANUT SAUCE:
  • 2 large boneless chicken breasts
  • ¾ cup soy sauce
  • ½ cup brown sugar
  • 1 tbsp. cooking oil
  • ¼ tsp. garlic powder
  • ½ tsp. ginger powder
  • Wooden skewers (soaked in water to prevent scorching)
  • 1/2 cup peanut butter
  • ½ cup water
  • 2 tbsp. brown sugar
  • 1 tbsp. soy sauce
  • 2 tsp. lemon juice
  • ½ tsp. crushed red chili peppers
  • ¼ tsp. garlic powder

Preparation

Step 1

Slice chicken into long thin slices. In bowl, mix soy sauce, sugar, oil, garlic and ginger. Put chicken into marinade mix. Allow to marinate for at least 1 hour.

Thread one or two pieces of chicken onto each skewer accordian fashion. Broil about 6 inches from heat, turning and basting with marinade after 3 minutes. Broil another 3 minutes or just til done. Serve with peanut sauce for dipping.

Peanut Sauce:
Mix in saucepan. Simmer for 5 minutes.
