Marianne's Split Pea Soup

Ingredients
- 1 cup dry split peas, rinsed & drain
- 7 oz. pkg. of turkey sausage (or other type you prefer)
- 1/2 cup celery, chopped (about 2 stalks)
- 2 elephant cloves of garlic, sliced (or double regular)
- 1 cup carrots, sliced (about 2 med.-sized)
- 1 medium onion, chopped
- 4 cups of chicken or vegetable broth
- 1 bay leaf
- 2 dashes of black or cayenne pepper
- 1/4 tsp. tumeric
- 1/4 tsp. coriander
- 1/8 tsp. thyme

Preparation
Step 1
1. Rinse and drain peas.
2. Slice sausage and saute in dutch oven for 3-5 minutes, until lightly browned.
3. Combine peas, sausage, broth and spices and bring to a boil
4. Reduce heat and cover pot and simmer for about 40 minutes to 1 hour, stirring occassionally.
5. Stir in carrots, celery, onion and garlic.
6. Return to boiling and reduce heat and cover again; simmer for about 50 minutes.
