Ingredients
- 1 1/2 # chicken wings (about 8), wing tips removed
- 1 C vegetable oil
- 3 Tbsp melted butter
- 2 Tbsp red wine vinegar
- 1/2 tsp cayenne
- 1/3 C blue cheese, crumbled (2 oz)
- 1/4 C cream cheese (2 oz)
- 2 Tbsp mayonnaise
- 2 Tbsp dry sherry
- 1 tsp Worcestershire
- 1/4 tsp each: celery salt and garlic powder
Preparation
Step 1
Cut each wing into 2 pieces. In large deep skillet, heat the oil over moderate heat to 365 °F or until a 1” cube of bread turns golden in 1 minute. Fry the wings for about 5 minutes or until cooked through, then transfer to paper towels.
In pie plate or shallow dish, combine the butter, vinegar and cayenne. Add the wings, toss to coat, then arrange of a warm platter. In a small bowl, blend the remaining ingredients and serve with chicken wings.
