Pecan Wedges

Ingredients

  • 6 sticks butter softened at room temp
  • 1 c sugar
  • 2eggs
  • 1/4 c whole milk
  • 4 c pastry flour
  • 1 c light brown sugar
  • 3 tbsp heavy cream
  • 3 c whole pecans
  • 2 c finely chopped semi sweet high quality chocolate

Preparation

Step 1

Put 4 sticks of butter and granulated sugar in bowl beat low-medium speed until mixed, 1 min
Add eggs all at once and beat until incorporated, 1 min
Add the milk and pastry flour and mix until thoroughly blended, 30sec to 1 min
Wrap dough in plastic wrap and chill until stiff, 30 min
Preheat oven to 400F
Divide dough into 4 pieces. Lightly flour surface and roll out each piece of dough into a log. Transfer to a baking tray and flatten so fatter at end than at centre. Crimp edge on both sides
To make caramel mixture, put remaining 2 sticks of butter, brown sugar and cream in saucepan and bring to boil over high heat. Remove from heat and stir in pecans. Spoon pecan mixutre into ravine in the centre of the logs.
Bake until golden brown, 20 min
Remove trays from oven, transfer bars to cutting board and cut each bar crosswise into 4-5 wedges
Melt chocolate in double boiler set over med-high heat. Dip half of each wedge into chocolate and let cool and dry on wire rack or parchment for 30min
