Ingredients
- 3 cups vegetable oil, soybean or Canola
- 2 pounds fresh fish fillets (cod, haddock, or other firm white fish)
- 1 1/3 cups self-rising flour
- 1 cup water
- 1 egg
- 2 teaspoons granulated sugar
- 2 teaspoons salt
Preparation
Step 1
Heat oil to 375°. Cut the fish into wedges. Whisk together the flour, water, egg, sugar, and salt. Dip each fillet into the batter coating generously and quickly drop in the hot oil. Fry each fillet until a deep golden brown, about 5 minutes. Remove and drain on paper towels.
