Fig and Blue Cheese Tart

  • 1 sheet frozen puff pastry, thawed
  • 2 T. olive oil
  • 2 large onions, thinly sliced
  • 6 large dried figs, chopped
  • salt and pepper
  • 1/2 cup water
  • 2 oz. blue cheese, crumbled

Preparation

Step 1

preheat oven 400 F

line baking sheet with parchment.
Roll out puff pastry into roughly 10x16 rectangle and transfer to baking sheet. Trim uneven edges, score a 1 inch border around the outer edge of the dough with knife without cutting through the dough. With a fork, pierce the interior of the tart to prevent rising. Bake about 15 minutes, or until the outer edges have puffed and are golden.

Heat 2 T. oil add onions and figs season with salt and pepper. cook stirring occasionally until onions start to brown, add water, a T. at a time, scraping as it cooks.
caramelize until golden brown, remove from the heat.

when ready to serve, preheat the oven to 350. Evenly spread the onion and fig mixture on shell top with blue cheese crumbles and heat until warmed through 5-7 minutes. serve warm or at room temp.
