Creamy Carrot Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 large baking potatoes peeted and chopped
  • 1 pound carrot peeled and chopped
  • 29 ounces chicken broth
  • 1 cup skim milk
  • salt and pepper

Preparation

Step 1

In a large saucepan, heat the olive oil. Add the onion. Add the onion, cover and cook over medium heat 2 minutes. Uncover and cook storing
occasionally, untt the onion is soft and Bghtty colored, about 3 minutes longer

Add the potato, carrots and chicken broth. Bring to a boil, reduce the heat and simmer, parifaly covered, 30 minutes.

Puree the soup in a food processor or blender. Return tot he pot and stir in (he milk Una Mended. Season with salt and pepper to taste. Reheat until hot
before serving.

Optional: garnish with fresh parsley
