Crabmeat Fondue

Ingredients

  • 1 tsp butter
  • 2 Tbsp minced shallots
  • 2 Tbsp white wine
  • 1 C heavy cream
  • 1/2 # cream cheese, cut into cubes
  • 1/4 # white cheddar, grated (about 3/4 C)
  • 1 # lump crabmeat
  • 1 Tbsp fresh lemon juice
  • 3/4 tsp Dijon mustard
  • 3/4 tsp Creole seasoning

Preparation

Step 1

In medium saucepan melt butter over moderate heat. Add shallots and cook, stirring occasionally, until translucent, about 3 minutes. Add wine and cook until almost evaporated. Add cream and simmer until reduced by half, about 3 minutes. Reduce heat to low and gradually stir in cream cheese, letting it melt before adding more. Gradually stir in cheddar until melted. Remove fondue from heat and stir in remaining ingredients. Transfer to fondue pot and serve with bread.
