Ingredients
- 1 1/2 cups butter, softened (3 sticks)
- 3/4 cups honey
- 1 teaspoon vanilla extract
- 2/3 cup very finely ground almonds
- 1 3/4 cups whole wheat pastry flour
- 1 3/4 cups unbleached white flour
- Jam for center of cookies (optional)
Preparation
Step 1
1. Preheat oven to 325 degrees.
2. With an electric mixer, cream softened butter, honey, and vanilla together until smooth. Add almonds, then flours. Work in with hands an knead on floured board until well mixed. If there is time, refrigerate dough 1 hour before cutting into shapes.
3. Roll out dough approximately 1/8 to 1/4 inch thick on large floured board. Cut into shapes with cutters or an upside down glass.
4. Place on cookie sheet lined with parchment paper. If filling with jam, make a thumbprint in the center of each cookie and put a dab of your favorite jam in it after you place the cookies on a cookie sheet.
5. Bake for 7 to 12 minutes, until the edges of the cookies are light brown. Let cool on racks.
Note: Both the cookies and dough freeze well.
