Ingredients
- 2 heads of cabbage
- 1 cup of barley
- 3 1/4 lbs of ground beef
- 1 15 oz can of tomato sauce
- 2 packages of onion soup mix
- 4 10 3/4 oz cans tomato soup
- 3 packages of Sauerkraut
- 1 tbsp garlic powder
- 1/3 cup flour
Preparation
Step 1
Core cabbage heads. remove any discolored outrer leaves
Bring large pot of water to a boil. Place cabbage head in boiling water and scald head. Outer leaves will loosen. Remove leaves one by one while boiling intil you get to a small ball.
When each leave is removed thin heavy vein with a paring knife sso you have a smooth leave.
Take remining small ball and remove from pot and let cool. Chop the ball into course strips and palce in bowl.
Cook second head in a similar fashion. All this can be done a day ahead of time
Meat mix:
Place ground beef in large mixing bowl along with 2 packages of onion soup and i can of tomato sauce. Add barley and tablespoon of garlic powder. Mix thoroughly with hands.
Roll meat mixture in cabbage leaves starting from rib side down. Tuck in sides as you roll. There will be leftover cabbage leaves----very large ones usually that can be cut up and added to the previous cut up cabbage or cut large leaves in half and use to roll meat with vein to the side.
Place on sheet pan as you roll the leaves.
In a large mixing bowl place 4 cans of tomato soup (or tomato sauce) and rinse cans with water 1/2 and add to bowl. Add about 1/3 cup of flour in whisk.
Place rolls in rosting pan:
Line bottom of roasting pan with cut up cabbage and package of sauerkraut. Place rolls in one layer.
Over first layer of rolls add another layer of cut up cabbage and sauerkraut. Add second layer of rolls placing then crosswise to first layer. Top with remaining cut cabbage and package of sauerkraut.
Pour misture of tomato soup over rolls covering thouroughly. Take a spatula and move rolls from edge of pan to allow juice to spread to bottom of pan.
Preheat oven to 350. cove roasting pan with alumoinum foil and pcce in oven for 2 to 2 !/2 hours.
