Dessert - Banana Bread - White Chocolate Chip

Ingredients

  • 2 Ripe Bananas
  • 3/4 cups Chickpeas
  • 1/4 cup Coconut Oil
  • 1/4 cup honey
  • 4 Stevia packets (like you'd put in your coffee)
  • 2 cups Whole Wheat Pastry Flour (or sub other flour)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 2 Eggs
  • 1 1/2 cup White Chocolate Chips (could use less -- one cup)

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. Mash bananas in a medium mixing bowl. Mash chickpeas in a separate measuring cup.

3. Combine all ingredients in the medium mixing bowl.
Use non-stick spray on a loaf pan (I used a glass one).

4. Bake for 50 - 55 minutes, making sure a knife (or toothpick) comes out clean when poked in the middle of the loaf. If it starts getting too browned like mine did, you can cover with foil at about 45 minutes into baking.

5. Let it cool. Then, slice and enjoy with either melted butter, your favorite nut butter, or just plain.
