Linguine with Sweet Potatoes (Kicked Up)

Ingredients

  • 1 box Linguine ( Whole Grain )
  • 2 small sweet potatoes Diced into 1/2 inch pieces
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cayenne pepper
  • 1 small jar roasted red peppers diced small
  • 10 to 15 Grape tomatoes sliced into small pieces
  • 1/4 teaspoon sea salt and pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/4 cup parmesan romano cheese
  • 1/2 cup ricotta cheese

Preparation

Step 1

1 Cook the pasta according to the package directions and add 2 tablespoons of Unsalted butter. when pasta is done Reserve ½ cup of the cooking water. Drain the pasta and return it to the pot.
2 while pasta is cooking heat the oil and 2 tablespoons of the unsalted butter in a large nonstick skillet over medium heat add the cubed sweet potatoes the nutmeg, Red peppers,sea salt, and pepper and cook until sweet potatoes are tender ( not mushy )
3 Pour over the pasta the potato mixture, Parmesan, and reserved cooking water. Mix well and add the ricotta and mix before serving.
