10-minute microwave brownies

Ingredients

  • 2 eggs
  • 1/4 cup unsalted butter (1/2 a stick), melted and cooled
  • 1 tsp. vanilla extract
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/3 cup semisweet or white chocolate chips
  • 1/3 cup coarsely chopped macadamia nuts (or whatever kind of nuts you have)

Preparation

Step 1

Spray 8x8x2 inch glass baking dish with nonstick spray. (I've used pie dishes and fluted flan dishes and they work fine. They rotate better in the micro, too.)

Whisk eggs, butter and vanilla in a large bowl to blend.

Add sugar, cocoa and flour. Blend well.

Stir in chips and nuts.

Spread in prepared dish

Cook brownies on high in microwave 5 minutes. (Tester should come out clean.)

Cool 5 minutes.
