Ingredients
- 8 thin slices beef, top round about 2 ounces each
- 8 thin slices pancetta
- 1/4 cup pecorino cheese
- 1/2 cup parsley, chopped
- 3 cloves garlic, chopped
- Hot red pepper flakes
- 1/2 cup dry white wine
- 28 oz crushed strained tomatoes
Preparation
Step 1
Spead out the beef slices, in the centre of each slice lay a slice of pancetta and evenly distribute the pecorino, parsley, and garlic. Add the salt and hot red pepper to taste. Roll up and tie with kitchen string.
Brown rolls in oil, over high heat. Pour in wine, when wine has evaporated, add the tomato sauce and simmer on low heat for 2 hours.
