Grandma Ruby's Cranberry Salad

This is handed down from my great-grandmother. My mother makes it every year for Thanksgiving as a stand-in for traditional cranberry sauce. It's not a dessert, (it's not all that sweet) we just serve it as a side dish.

I've taken it to the few Thanksgivings I've spent away from my family and it always gets rave reviews.

Ingredients

  • 2 cups sugar
  • 1 scant cup water
  • 1 quart fresh cranberries
  • 15 large marshmallows, cut up
  • 1 large package of lemon jello
  • 1 cup cold water
  • 1 cup nuts, chopped
  • 1 cup apple, chopped
  • 1 cup celery, chopped

Preparation

Step 1

Boil the first three ingredients together for 5 minutes. Add the marshmallows and the jello. Stir until the marshmallows have dissolved. Let it cool.

When it is cool, add the cup of cold water, nuts, apples and celery.

Pour into a 9" square dish and refrigerate until solid and ready to serve.

(I usually make this in a clear, square glass dish because it looks pretty from the sides. I serve it cut into small squares because it seems nicer to me than a big glop from a spoon.)
