Deviled Eggs

There are a number of variations included here.

Ingredients

  • •8 hard-boiled eggs, peeled and sliced in half
  • •1/3 cup mayonnaise
  • •1 teaspoon dry mustard
  • •¾ teaspoon apple cider vinegar
  • •¼ teaspoon salt
  • •¼ teaspoon pepper
  • •¼ tin salted anchovies (or 1 teaspoon anchovy paste)
  • •Fresh parsley and paprika (for garnish)

Instructions:

1.Remove the egg yolks and place in a bowl. Add mayonnaise, mustard, vinegar, anchovies (or anchovy paste, salt and pepper.
2.Mash ingredients until thoroughly mixed. If desired, add a small amount of Worcestershire sauce.
3.Distribute egg yolk mixture evenly in the empty egg slices. Serve on a platter with sprigs of parsley and paprika on the side.
Deviled Egg Variations
•Eggs with Ketchup: Replace the apple cider vinegar with a tablespoon of ketchup.
•Eggs with Mustard: Replace the dry mustard with a tablespoon of dijon mustard.
•Eggs with Vegetables: Add a teaspoon of diced onions, a teaspoon of diced celery, and a half teaspoon of scallions to the yolk mixture. Puree in a food processor and spoon into empty egg slices.
•Italian Deviled Eggs: Replace the apple cider vinegar with balsamic vinegar and add a teaspoon of dried basil to the yolk mixture.
•Spanish Deviled Eggs: Add a tablespoon of salsa and a few drops of hot sauce.
•Eggs with Mild Anchovies: Instead of salted anchovies, add two filets of white, unmarinated anchovies to the yolk mixture. Puree in a food processor and spoon into the egg slices.
•Indian Deviled Eggs: Add a teaspoon of garam masala and ½ teaspoon of cardamom.
•Puttanesca Eggs: Add a teaspoon of tomato paste and a tablespoon of diced olives. Puree and spoon into the egg slices.
•Eggs with Ham: Add three tablespoons of finely chopped ham .
•Eggs with Bacon: Add three tablespoons of finely chopped bacon or pre-cooked bacon bits.
•Eggs with Anchovy Mayonnaise: Make an easy anchovy mayonnaise and substitute for store-bought mayonnaise. Omit the anchovy paste or anchovies in the deviled eggs recipe.
•Deviled Eggs with Crabmeat: Add 1/3 cup backfin crabmeat and 3 tablespoons extra mayonnaise. Stir well.
•Spicy Deviled Eggs: Add a few sprinkles of crushed red pepper and two diced jalapeño peppers.
•Honey Eggs: Replace the dry mustard with 1 tablespoon honey mustard. You can also drizzle in a teaspoon of real honey.
