WHITE FRUIT CAKE

Ingredients
- 1 lb blanched almonds
- 1/2 lb. candied citron (mixed peel)
- 1/4 lb. pineapple
- 3/4 lb. candied cherries
- 1/2 lb. sultana raisins
- 1/2 cup flour
- dredge cut-up fruit with flour
- 1-1/2 cups butter
- 2 cups sugar
- 6 eggs, separated
- 3/4 cup milk
- 1/4 cup brandy
- 1 tsp almond extract
- 3-1/2 cups sifted flour
- 1 tsp cream of tartar
Preparation
Step 1
Cream butter and sugar. Add egg yolks and beat.
Combine liquids and add alternately with flour. Add fruit.
Beat egg whites until foamy and add cream of tartar. Beat until stiff peaks form and fold into other mixture.
Put in lined greased pans and bake at 300 degrees for 2-1/2 hours and turn out on racks.
Makes 2 loaf pans.
