Boursin Mashed Potatoes

Ingredients

  • russet potato 3-1/2 pound cut into 2" chunks
  • milk 1/2 cup
  • boursin garlic, herb cheese 2 (5.2 ounce) packages
  • salt 1/4 teaspoon
  • pepper 1/8 teaspoon coarsely ground

Preparation

Step 1

Preheat oven to 350°
Place potatoes in a large saucepan add enough water to cover
Bring to a boil over high heat
Cover and reduce heat to medium
Simmer for 15 minutes, or until potatoes are tender
Drain, and return to saucepan
Mash potatoes with a hand mixture, add milk and mix with a electric mixer until creamy
Mix in cheese, salt and pepper until well blended
Spoon into a shallow 2 quart baking dish
Bake 20 minutes, or until hot

Makes 8 servings (1/2 cup each)
