Chicken Vegetable Soup

Ingredients

  • 1 whole chicken, cut up or 4 - 6 Chicken Breasts
  • 4 stalks of celery
  • 4 to 6 carrots, peeled and grated
  • 2 large potatoes- peeled and diced
  • 1 med can tomatoes (Cut up) or one can tomato juice
  • 1 small can tomato paste (optional)
  • 1 to 2 boexes frozen peas or baby limas
  • 1 to 2 cans shoepeg corn
  • 2 T sugar
  • 1 T Salt to taste
  • Freshly ground pepper
  • 6 T butter

Preparation

Step 1

Boil chicken 45 mins to 1 hour in large pot. Remove chicken, take off skin and remove bones. Set aside. Add enough water to broth in ot to make at least 1 1/2 quarts. Bring broth to a boil and add remaining vegetables, sugar, salt, peepr and butter.

Simmer on low for one hour stirring occasionally with wooden spoon.

Add checking and stir again. Should make about 4 quarts. May add more water if too thick.
