Ingredients

  • 2 lbs chicken
  • 2 cloves garlic
  • 10 cups chicken stock
  • 2 Tbsp Olive Oil
  • 3 carrots, sliced into rounds
  • 3 ribs celery, cut into 2 inch pieces
  • 1 onion, roughly chopped
  • 1/4 cup fresh parsley, chopped
  • 1 cup parmesan cheese, grated
  • 2 cups cooked pasta

Preparation

Step 1

Saute carrots, celery, garlic, and onions in olive oil for about 5 minutes.

Pour in the chicken stock and bring to a simmer. Add the chicken legs and continue cooking for about 15-20 minutes.

Remove the chicken, cool until they can be handled, and then shred the meat.

Add the chicken back into the stock and vegetables. Simmer for 10 minutes.

Add pasta just before serving.

Garnish with parmesean cheese and parsley.
