Ingredients

  • 1-1/2 lb potatoes
  • 2-3 large carrots, sliced
  • 1 lb lean brisket
  • 1 C brown ale
  • 1 lb onions, sliced
  • 1/2 lb belly of pork or fat ham, diced
  • 1/4 tsp dried sage
  • 1 oz butter

Preparation

Step 1

Put a third of the potatoes at the bottom of a casserole, then half the onion, carrots and meat. Season each layer, putting sage on the meat. Then put another layer of potatoes, the final layer of meat and the final layer of carrots, finishing up with the last third of the sliced potatoes. Pour on the brown ale. Dot with the butter. Cook in a 350 F oven, uncovered, for 15 minutes, then cover tightly for 1-1/2 hours. Remove cover and cook for an additional 20 minutes to let the potatoes brown.
