Ingredients

  • 1# crab meat ( blue crab, pref. lump meat, but claw is ok if that is all you can find in MI ) picked over for cartilage...making careful to not break apart too much.
  • 1 Tbsp. Old Bay Seasoning ( must be Old Bay )
  • 1 Tbsp. Worchestershire sauce
  • 1 tsp. dry mustard
  • 2 tsp.-1 Tbsp. baking Powder( makes the cakes puff alittle)
  • 1/2 to 3/4 cup. Ritz cracker crumbs ( Club OK )
  • 1/4 cup chopped green onions ( mostly green tops )
  • 1 egg
  • 1/4 cup Mayo (Hellman's ..not non-fat ---ewww)
  • Canola Oil to fry in.
  • Horseradish(if desired for spice)...we add it!

Step 1

1.Open up crabmeat container and check for any nasty cartilage...careful not to mush-up too much. add all of the ingredients, mix gently and make into patties, place onto waxed paper.In large shallow skillet, Fry carefully on first side til golden brown, flip and repeat on uncooked side. Try not to over-fry to keep the center moist.
2.Serve HOT to deserving friends and family!
