Smashed Potato Soup

Ingredients

  • 3 1/2 lbs russet potatoes, peeled and cubed
  • 1/2 cup yellow bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 tbsp pepper
  • 4 1/2 cups chicken broth
  • 1 cup half/half
  • 1 cup cheddar cheese, shredded
  • Salt to taste
  • 1/2 cup green onions, chopped

Preparation

Step 1

In a crock pot, combine the potatoes, bell pepper, garlic and pepper. Add chicken broth. Cook on low heat for 8 hours or high heat for 4 hours.

After cooking, slightly mash the potatoes. Stir in half/half, cheese and half of the green onions. Cook for an additional 30 minutes. Garnish with green onions and serve with warm French bread.
