Sweet and Sour Chicken Chunks

Ingredients

  • 1 pound boneless, skinless chicken breast, cut into 1-1/2" pieces
  • teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup butter
  • ½ cup plum jam
  • 2 teaspoons mustard
  • 2 teaspoons horseradish
  • 1 teaspoon lemon juice
  • 1/8 teaspoon ground mace (optional)
  • Toothpicks

Preparation

Step 1

Sprinkle the chicken with salt and pepper. In a medium skillet, melt the butter and add the chicken; sauté minutes or until firm.

Meanwhile, in a small saucepan, combine the plum jam, mustard, horseradish, lemon juice and mace (if used.) Heat and stir until well-blended.

Add the chicken chunks and heat until well-coated with the sauce. Serve on a platter, with each piece of chicken stuck on a toothpick. Spoon sauce over and around chicken pieces.
