Ingredients
- 3 lbs. eggs
- 1 lb. 14 oz. sugar
- 1 lb. 6 oz. cake flour, sifted
- 8 oz. cornstarch
- 10 oz. butter, melted and cooled
- 1 tbs. vanilla
Preparation
Step 1
Grease 5 10inch cake rounds. Combine the eggs and sugar in a bowl. Mix until the mixture resembles thick cream and reaches 110 degrees. Whip on high speed with an electric mixer until the batter is light and being to recede, 15 minutes. Mix on medium speed for 10 minutes.
Sift the dry ingredients 3 times. Fold the dry ingredients into the egg to deflate the batter. Remove a small amount of batter and add the butter and vanilla. Quickly and gently fold the butter mix into the remaining batter. Bake at 350 degrees for 25 minutes.
