New England Baked Beans - Espresso Style

Ingredients
- 1/2 cup chopped onion
- 2 cans (1 pound each) Boston-style baked beans
- 1 tsp dry mustard
- Salt, to taste
- Pepper, to taste
- 1/2 cup molasses
- 1/4 cup packed brown sugar
- 1/2 cup (4 ounces) brewed espresso
- 1/2 cup boiling water
- 1/4 pound lean salt pork, trimmed
Preparation
Step 1
Place the chopped onion and beans in a deep casserole dish. Mix the dry mustard with the beans and add salt and pepper to taste. Combine the molasses, brown sugar, espresso and boiling water; pour over the beans. Score the salt pork with a sharp knife. Bury the salt pork in the beans. Bake in a moderate oven (350 F) for 1 hour, stirring occasionally.
