Demi Glaze

Ingredients

  • 3 cups mirepoix ( onion-carrots-celery )
  • 2 tbl olive oil
  • sea salt
  • 1 Tbl tomato paste
  • 1 can chicken broth
  • 1 can beef broth
  • Thyme & rosemary
  • ½ cup red wine
  • veal stock paste
  • kitchen bouquet

Preparation

Step 1

Sweat miropoix in 2 tbl olive oil for 8-10 min till starts to brown
Add 1 Tbl tomato paste
Sauté another 3-4 min

Salt with sea salt
Add 1 can chicken broth
1 can beef broth
Add Thyme & rosemary
Add ½ cup red wine
Reduce by ½
Strain solids and return to pan
Add veal stock paste
Kitchen bouquet

Thicken with a slurry…. ( just about 1 tbl flour )
Simmer another 10 -15 min

Whisk in ¼ cup cream

Finish off by whisking in ¾ stick cold butter 1 Tbl at a time
