Panera's French Onion Soup

Ingredients

  • Garnish:
  • 1/4 C butter
  • 8 C sliced white onions (4-5 medium onions)
  • 2 14oz cans beef broth
  • 3/4 C chicken broth
  • 3 Tbsp all-purpose flour
  • 1 1/2 C water
  • 1 Tbsp ketchup
  • 1 1/2 tsp ground black pepper
  • 1 1/2 tsp salt
  • 1/4 tsp dried thyme
  • 1/4 tsp garlic powder
  • 2 drops Tobasco
  • croutons, butter, shaved Asiago cheese

Preparation

Step 1

Melt butter in large saucepan over medium. When melted, add onions and saute 15-20 minutes, stirring often, until onions turn brown.

Add remaining ingredients (not garnish) to pan and stir to combine. Heat soup until it's boiling, then reduce heat and simmer uncovered for 20 minutes.

Make croutons for top of the soup by slicing foccacia bread (or any bread) into 3/4" thick slices.
Butter both sides then cut slices into bite-size cubes. Bake in 425 °F oven for 15 minutes or until crispy.

Shave cheese using potato peeler.

Serve soup super hot with handful of croutons on top followed by 2 Tbsp shaved cheese.
