Heather's Cauliflower Gratin

This is a recipe that I tried and Jay enjoyed so we now have another good "veggie" recipe.

Ingredients

  • 3 lb. head cauliflower, cut into large florets
  • 1/2 stick margarine, divided
  • 3 Tbsp all-purpose flour
  • 2 cups hot milk
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. grated nutmeg
  • 3/4 cup freshly grated Swiss Cheese, divided
  • 1/2 cup freshly grated Parmesan Cheese
  • 1/4 Italian Bread Crumbs
  • Salt

Preparation

Step 1

Preheat the oven to 375 degrees Fahrenheit. In a large pot, cook the cauliflower florets in boiling water for 5 - 6 minutes, or until tender but still firm; Drain. In a medium saucepan over LOW heat, melt 2 Tbsp of margarine. Add the flour, stirring constantly for 2 minutes. Add the hot milk to the flour mixture and stir until it comes to a boil; Whisk constantly for 1 minute or until it has thickened. Remove the pan from the heat and add 1 tsp salt, pepper, nutmeg, 1/2 cup Swiss Cheese, and the Parmesan Cheese. Pour 1/3 of the sauce into the bottom of an 8" x 8" glass dish. Place the cauliflower on top of the sauce and spread the remaining sauce evenly on top. Sprinkle 1/4 cup Swiss Cheese and bread crumbs on top. Drizzle the melted 2 Tbsp margarine over the cauliflower gratin. Sprinkle the dish with salt and pepper. Bake the cauliflower gratin for 25 - 30 minutes or until the top of the dish is browned. Serve the cauliflower gratin hot or at room temperature.
