Ingredients
- 1 # lean ground beef
- 1 pkg enchilada sauce mix
- 8 oz can tomato sauce
- 1 1/2 C boiling water
- 2 C sour cream
- 8 oz cheddar cheese
- 12 corn tortillas
- 4 oz chopped green chilies
Preparation
Step 1
Saute beef and drain fat.
In saucepan, combine tomato sauce, water, enchilada mix and simmer 10 minutes. Add half of this to the meat along with 1/2 of cheese. Lightly fry torillas and drain on paper towel. Place 2 Tbsp meat mixture on each tortilla and 1 Tbsp sour cream. Roll and place seam side down on a non-stick casserole.
Spread remaining sour cream over the top, sprinkle with green chilies and cheese. Spoon enchilada sauce over all.
Bake 20-30 minutes at 350 °F.
