Ingredients
- 1 small pineapple, skin and core removed, sliced into 1/4 inch slices
- 2 tbsp (25 mL) butter
- 4 tbsp (60 mL) brown sugar
- 1 orange, zest removed and juice saved
- Vanilla ice cream

Step 1
Place the pineapple rounds on a hot grill and cook for 2 minutes and then spin 90 degrees and cook for 2 more minutes and flip. You should have some nice grill marks charred into one side; now repeat on the other side and move off to a cooler side.
Put a small saucepan on your side burner (if you have one); if not, place it over a burner on your grill and melt the butter in it. Add the brown sugar, orange juice and zest and bring all to a boil and let reduce to a syrupy consistency. Then place the grilled pineapple rings in the sauce and allow to simmer for 2 to 3 minutes.
Scoop vanilla ice cream into serving bowls, then place one pineapple ring on top and a bit of the sauce. Garnish with a sprig of mint and serve. (And yes, we know pineapple’s a fruit, not a veggie. But it’s delicious!)
