Amaretto Cherries with Dumplings

  • 2 14 1/2oz cans pitted tart cherries
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/8 tsp salt
  • 1/4 cup amaretto
  • Dumplings
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp grated lemon peel
  • 1/8 tsp salt
  • 1/3 cup 2% milk
  • 3 Tbs butter, melted
  • Vanilla ice cream, optional



Step 1

Drain cherries, reserving 1/4 cup juice. Place cherries in slow cooker.
In a small bowl, combine the sugar, cornstarch and salt. Stir in reserved juice until smooth. Add to slow cooker. Cover and cook on high for 7hr. Drizzle amaretto over cherry mixture.
For dumplings, in a small bowl, combine the flour, sugar, baking powder, lemon peel and salt. Stir in milk and butter just until moistened. Drop by TBS fuls onto hot cherry mixture. Cover and cook for 45 or until a toothpick inserted in a dumpling comes out clean. Serve with ice cream if desired.
