Ingredients
- 2 ½ tsp paprika
- 1 ½ tsp dried oregano
- 1 ½ tsp dried thyme
- ½ - 1 tsp cayenne pepper
- 1 ½ tsp sugar
- 1 ½ tsp sea salt
- 1 ½ tsp fresh ground pepper
- 2 lbs of red snapper fillets with skin on
- olive oil spray

Preparation
Step 1
In small bowl combine paprika, oregano, thyme, cayenne, sugar, salt, and pepper. Set aside.
Rinse fillets. Place fillets on a clean, dry surface with skin side up and pat dry. Cut three shallow slits in skin to keep from curling up while grilling.
Turn fillets over and pat dry. Sprinkle the top of each fillet with spice mix, pat gently with hand to make it stick. Cover and place in refrigerator for 1 hour.
Preheat Grill medium heat. Spray Spiced side of fish with oil olive. Grill starting with spiced side down first for 4 minutes. Spray skin side with oil and flip and grill for 4 minutes or until fish flakes with a fork.
