Southwest Corn and Bean Salad

Ingredients

  • 4 ears of grilled corn or ½ bag of Trader Joe’s frozen grilled corn
  • 1 can (15 oz ) black beans drained and rinsed under cold water
  • 6 T. corn oil or Enova oil
  • 1 ½ T. of balsamic vinegar
  • ½ tsp. ground cumin
  • ½ tsp. garlic powder or 1 clove garlic minced
  • Fresh salad greens
  • 3 large tomatoes diced
  • Tops of three scallions sliced (I used the whole onion)
  • Salt and pepper to taste
  • 3 ounces of crumbled Mexican-style Cotija or feta cheese
  • 1 cup pinenuts toasted 5 minutes in a 350 degree oven

Preparation

Step 1

Mix corn and black beans together and set aside. Blend together oil, vinegar, and spices. Place a mound of corn and beans on a bed of greens. Top with tomatoes and scallions. Sprinkle with cheese and pinenuts and drizzle with dressing. Serve chilled.
