Ingredients
- 1 box (1 pound) ziti pasta
- 1/2 cup sweet red pepper, chopped
- 1/2 cup sweet green pepper, chopped
- 1 container (15 ounces) ricotta
- 1 package (8 ounces) shredded mozzarella cheese
- 4 slices pepperoni, quartered
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 jar (26 ounces) marinara sauce
- 1 can (28 ounces) plum tomatoes, drained and broken apart
Preparation
Step 1
1. Bring pot of salted water to boiling. Add ziti; cook 4 minutes. Add peppers; cook 4 minutes. Drain; rinse with cool water. Transfer to bowl.
2. In medium-size bowl, mix ricotta, half the mozzarella, the pepperoni, basil, salt, pepper and 3 tablespoons Parmesan. Add to ziti; stir to combine.
3. Add half the marinara sauce and half the tomatoes to ziti. Coat 13 x 9 x 2-inch baking dish with nonstick cooking spray. Transfer pasta mixture to prepared dish, spreading level. Top with remaining marinara sauce and tomatoes. Sprinkle with remaining mozzarella cheese and remaining Parmesan. Cover with foil; refrigerate until baking or overnight.
4. To bake: Heat oven to 375°. (If taking dish directly from refrigerator, place in oven while heating.) Bake, covered, 30 minutes. Uncover; bake 15 minutes. Let stand 10 minutes.
