Rice Pudding

Ingredients

  • 1 cup long grain rice (not instant or fast cook)
  • 6 cups milk (you can use 1%)
  • 1 cup sugar (I use a little less - maybe about 3/4 cup)
  • 2 tbsp vanilla
  • 2 eggs
  • 1/2 pint heavy cream
  • Cinnamon

Preparation

Step 1

Soak rice in water for up to 2 hours but not less than 1 hour. The longer the rice soaks, the more tender it will be.

In large pot combine milk, soaked rice, sugar. Cook on medium high heat for 1 hour, constantly stirring. If mixture is boiling too rapidly, decrease heat. Taste the rice and make sure it is soft but not mushy.

In a bowl combine eggs, cream & vanilla. Add to rice mixture and cook for 10 minutes.

Take off heat and immediately transfer to serving bowls. Sprinkle with cinnamon and let cool completely before covering and storing in refridgerator.
