Chicken Enchiladas

Ingredients

  • 1 T. butter
  • 1 medium onion, chopped
  • 1 (4.5oz) chopped green chilis, drained
  • 1 (8oz) cream cheese, softened, cut up
  • 3 1/2 c. cooked chicken breast, chopped
  • 8 (8") flour tortillas
  • 2 (8oz) Mont. Jack, shredded
  • 2 c. whip cream

Preparation

Step 1

Melt butter. Add onion to melted butter, saute 5 minutes. Add chilis, saute 1 minute. Add cheese and cooked chicken breast and cook until cheese melts. Add 2-3 T. chicken mix in tortillas, roll up seamside down. Sprinkle shredded cheese over. Drizzle whip cream over.
