Ingredients

  • Casserole:
  • 4 Medium Louisiana yams
  • 2 Eggs
  • 1/4 Cup of firmly packed dark brown sugar
  • 2 Tablespoon melted butter
  • 1/2 tsp. salt
  • Topping:
  • 1/2 cup of chopped pecans
  • 1/4 cup firmly packed dark brown sugar
  • 1/4 cup melted butter

Preparation

Step 1

Cook yams until tender. Peel and quarter yams and mash in a large bowl. Beat in 2 eggs, 1/4 cup firmly packed dark brown sugar, 2 tablespoon melted butter, 1/2 tsp. salt.
Turn into 1 quart casserole dish. Evenly spread chopped pecans over top. Sprinkle with 1/4 cup firmly packed dark brown sugar. Drizzle with 1/4 cup of melted butter. Bake, uncovered, for 20 minutes at 375 degrees.
