Beef and Brussels Sprout Stirfry

Ingredients
- 1/2 lb flank steak
- 1/4 t salt
- 1/8 t fresh ground pepper
- 2 T olive oil divided
- 1/2 C. Beef broth
- 2 t. Soy sauce
- 2 t. Fresh lime juice
- 1/2 t. Cornstarch
- 12 oz fresh Brussels sprouts trimmed
- 1 red jalepeno sliced into slivers
- 1 T fresh grated ginger
- 2 cloves of garlic thinly sliced
- 1/4 C. Fresh mint
- Hot cooked rice

Preparation
Step 1
Cut steak diagonally across the grain into strips. Sprinkle with salt and pepper.
Stir fry steak, in oil in a large cast iron skillett2-3 minutes. Transfer to plate.
Wisk together broth, and next 4 ingredients until smooth
Stir fry Brussels sprouts in remaining oil over high heat for 2 minutes until lightly browned. Add jalapeño, ginger,and garlic and stir fry for 1minute. Pour soy sauce mixture over Brussels sprouts and bring to a boil. Cook 3-4 minutes stirring often.
Serve over rice.
